份量 Serving: 3-4 人 PPL烹調時間 Cooking time: 15 分鐘 min 材料 Ingredients :1條(ea) 杏鮑菇 king oyster mushrooms184g 豬腩肉 pork belly160g 豬頸肉 pork neck1棵 (pc) 芹菜Celery1粒 (ea) 紅蔥頭 shallot3片(pc) 薑片 sliced ginger小量 QS 鹽Salt小量 QS生抽Soy sauce 方法 method :1. 沖洗杏鮑菇、撕條狀,把條狀浸在清水中。Wash the king oyster mushrooms. Tear it into strips and soak it in clear water. 2. 沖洗豬腩肉 、豬頸肉, 切條絲。用少少鹽 、生抽、 蠔油 醃肉絲。肉絲在15分鐘後加入豆粉(生粉)攪勻。Wash the pork belly and pork neck, cut into strips.Marinate it with a little salt, light soy sauce and oyster sauce。 Put the cornstarch in and mix well after 15 minutes. 3. 清洗芹菜、切片,待用。Wash and slice celery, and set aside. 4. 先炒芹菜,洗鍋。 再爆香肉絲。Fry the celery first. Clear the wok and fry the shredded pork. 5. 加油爆香紅蔥頭、薑片,爆香。轉大火,加入杏鮑菇、烹至轉小金黃色。加入肉絲,炒一會。加入獻汁 (豆粉加水),炒至收汁。加入芹菜,炒勻後可上碟。Add oil and sauté shallots and ginger slices until fragrant.Turn to high heat, and add king oyster mushrooms.
