蕃茄羅勒茄子意粉 Eggplant Pasta with Basil Tomato sauce 繼續清除茄子的菜式~試完個中式茄子,今次就試個西式菜式,香港既西餐廳好少會用茄子,但我曾經係日本既西式餐廳試過茄子意粉,發現原來茄子配茄汁原來係好夾好好食! 材料(2人份) 意粉 200克 茄子 1條 蕃茄 1個 蕃茄意粉醬 4-5湯匙 蒜頭 3瓣 新鮮羅勒葉 10片 鹽 1茶匙 黑胡椒 隨意 糖 1茶匙 (可不加) 做法: 1/ 茄子切成粒狀,浸鹽水15分鐘 2/ 煲滾水落少許鹽烚意粉(根據包裝上時間減1-2分鐘),撈起備用 3/ 蕃茄切粒,羅勒葉略切碎,蒜頭切碎 4/ 易潔鍋落油燒熱,爆香蒜頭,加入茄子炒至吸收油分後,稍煎烘至金黃,加入半杯水蓋上蓋煮至收一半水及茄子稍為軟身 5/ 加入蕃茄意粉醬,煮成杰身醬汁,加入蕃茄拌勻,加入鹽和黑胡椒調味,太酸可加入一茶匙糖 6/ 熄火加入羅勒葉拌勻,加入意粉拌勻即可 *沒有羅勒葉可以用番茜,用乾香草亦可,但新鮮的香草會令整知菜式有獨特的香氣。超市買新鮮香草貴又少,去花墟買盆十幾蚊既羅勒擺屋企,煮時摘幾片方便又新鮮,就算唔食都睇得~ ~~~~~~~~~Follow my intasgram ( niceylife ) for more updates!~~~~~~~~~ Ingredients (2 servings): Spaghetti 200g 1 Eggplant 1 Tomato 4-5 tbsp of Tomato Pasta Sauce 3 cloves of Garlic 10 pieces of Fresh Basil 1 tsp of Salt some Black Pepper 1 tsp of Sugar (Optional) Steps: 1/ Dice the eggplant,soak in salt water for 15 mins(Reduce eggplant to absorb oil) 2/ Boil Spaghetti with salted water, (according to the package for cooking time ), drain and set aside 3/ Dice tomato,chop bail,mice garlic 4/ Add oil to non-stick pan and stir fry the garlic, add eggplant and stir fry until all the oil absorbed,grill the eggplant til lightly golden, add half cup of water and cook with cover until the eggplant lightly soften. 5/ add tomato pasta sauce, cook til thicken, add tomato and seasoning, (add sugar only if too sour), mix well 6/ add the basil after off the fire, mix well with spaghetti *Parsley or dried herb can replace the basil but fresh herbs are the best for the smell, strongly recommend to plant some herbs at home
